How to Make Fresh Mozzarella Recipe: A Simple Guide to Perfect Cheese at Home

Ingredients:

  • 1 gallon whole milk
  • 1 cup heavy cream
  • 1/4 cup citric acid
  • 1/4 cup salt
  • 1 packet rennet (optional, for a firmer texture)

Instructions:

1. Heat the milk and cream to 88°F (31°C). You can use a milk thermometer to monitor the temperature. This is the ideal temperature for the cheese to set properly.

2. Sprinkle the citric acid over the milk and cream. Stir gently until the acid is fully dissolved.

3. Let the mixture sit for about 5 minutes. You’ll notice that the milk starts to curdle and form a thick layer on top.

4. If you prefer a firmer texture, add the rennet and stir gently for 1 minute. This will help the curds to firm up. If you prefer a softer texture, skip this step.

5. Let the mixture sit for another 5 minutes. The curds will continue to firm up during this time.

6. Carefully scoop the curds out of the mixture using a slotted spoon. You can press the curds together to form a solid mass.

7. In a large bowl, dissolve the salt in warm water. Place the curds in the saltwater and gently press them together to remove excess liquid. This will help the cheese to firm up further.

8. Once the cheese is firm enough, remove it from the saltwater and shape it into a ball or a log. You can also cut it into smaller pieces, depending on your preference.

9. To keep the mozzarella fresh, store it in a container filled with water and a little salt. Change the water every few days to prevent mold growth.

10. Enjoy your homemade fresh mozzarella in your favorite dishes or simply eat it with a drizzle of olive oil and a sprinkle of herbs.
